PRODUCTION OF EXTRA VIRGIN OLIVE OIL

The slowness it is underrated. A fruit that reaches its ripeness, a dough that rises, a fetus that grows, a pain that grips, a considered decision: there are many processes that they need time to evolve and give their best.

It's the same for the oil. By respecting certain standards and carrying out cold pressing (i.e. below 25°), even a continuous system can generate excellent oil. But where the continuous plant is closed, rapid and detached, the traditional method involves the use of more machinery and a whole series of steps which must follow one another in a certain order while assisting enchanted and inebriated by the smell to the transformations of the olives, which first become crushed paste, then oily must and only at the end... extra virgin olive oil.

OLIVE MILLING FOR THIRD PARTIES

La Pietra Bianca has always been available to milling service for third parties. In other words, if you own an olive grove you can bring your olives to us. Once you arrive at our oil mill, your olives will be unloaded and weighed. The milling cycle for 3 quintals of olives lasts 3 hours.

Once your oil has been extracted, you will be free to decide whether to package it in our cans or bottles or in your own containers. In order to obtain an excellent quality oil, it is necessary to contact us or come and visit us in the Frantoio to schedule the moment of milling avoiding excessively long storage times.
